The Story

16 Years of Partnership

This fully washed Guji comes from the Shakiso area where 310 smallholder producers have perfected the art of clean, bright washed processing. The washing station is equipped with modern eco-pulpers and a multi-channel fermentation system that allows for precise control. After selective hand-picking, cherries are depulped within six hours of harvest and fermented for 24 to 36 hours depending on ambient temperature. The beans are then washed through three separate channels to remove any remaining mucilage before moving to raised drying beds, where they dry slowly over 10 to 14 days. What makes this lot special is its clarity. The clean processing reveals the inherent character of Guji's terroir — floral aromatics, stone fruit sweetness, and a sparkling citrus acidity. The cooperative has also invested heavily in water recycling systems and quality control, making this not only a delicious coffee but an environmentally responsible one. We've worked with Shakiso for fourteen years, and their commitment to both quality and sustainability keeps us coming back.
