The Region

Why roasters keep Sidama on the menu

Sidama sits between Yirgacheffe and Guji in Ethiopia's south — geographically and in the cup. Washed lots bring dark chocolate, nut, and a rounded body that survives milk. Naturals add berry and winey sweetness without the ferment risk of wilder preparations. It's the Ethiopian that behaves.
